1 oz rhubarb syrup
1 oz gin
In your very best cocktail glass, combine 1 oz rhubarb syrup, 1 oz gin, and ice. Top with Prosecco with a fresh rhubarb stalk.
Rhubarb syrup: Combine 1 cup chopped rhubarb,1 cup sugar, and 1 cup water in a small saucepan. Bring to a boil. Reduce heat and simmer for 10 minutes. Cool and strain. Reserve stewed rhubarb and serve atop greek yogurt. Refrigerate leftover syrup.
